Most Delicious Banana Muffins

My husband insisted that I bake for him on Monday.  So I’m finally getting around to sharing this delicious treat that I made.  We had some excess bananas, and although my recipe calls for white chocolate (because it just becomes so beautifully melty and not too sweet), I used dark chocolate.  Now, for me, it just tastes better with white chocolate, but I work with what I got people!

My Banana Muffins

1+3/4 cup (245 g) all purpose flour (000)
1/2 cup (100 g) white sugar
1/4 cup (50g) light brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
65 – 100 g chopped white chocolate
2 large eggs, lightly beaten
113 g butter (1 stick), melted and cooled
3 ripe bananas (or 3 yellow bananas, microwaved a bit to be soft and mashable), mashed
1 tsp vanilla
1 banana or extra chocolate chips to garnish
pinch of cinnamon
pinch of nutmeg

Preheat oven to 200 (C).
In a large bowl, combine flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg and white cholate.
In a medium bowl, combine mashed bananas, eggs, melted butter, vanilla.
Lightly fold (read: FOLD ingredients no more than 10 times. it’s okay if there are some little dry spots, this is the secret to light and fluffy muffins) wet ingredients into dry ingredients until just combined.
I make a little well in the dry ingredients, pour all of the wet (banana mix) ingredients in, then fold them through 10 times.
Spoon batter (I use a 1/4 cup measurement) into muffin tin (makes 12 muffins). Place a sliced banana on top or sprinkle with chocolate chips or chopped chocolate.
Bake for @20 minutes or until top becomes a little golden.
